7:00 AM – Starting the Day Right
Every day starts early in our chocolate haven. Before any customers arrive, we’re already busy in our kitchen, checking ingredients, prepping equipment, and ensuring everything is set for a smooth day ahead. Quality control is key—we inspect all our ingredients, making sure they are as fresh and high-quality as possible. After all, we can’t make magic without the best ingredients!
8:30 AM – Melting, Tempering, and Creating Magic
One of the first tasks of the day is melting and tempering chocolate. Tempering is a crucial step that gives our chocolate its signature shine and satisfying snap. It’s a precise process of heating, cooling, and reheating the chocolate to just the right temperature. It may sound technical, but this is where the artistry comes in—getting that perfect glossy finish is what makes each bar or truffle look (and taste) like perfection.
Once the chocolate is tempered, it’s time to get creative. Whether it’s crafting our classic bars, our best-selling filled bonbons, or experimenting with a new flavor combination, each piece is made with care and attention to detail.
10:00 AM – Chocolate Taste Tests (Yes, It’s a Real Job!)
This is one of the best parts of the day—taste testing! Quality is everything and we believe the only way to ensure perfection is to taste the chocolate ourselves. Whether we’re working on a batch of our signature pralines or testing new flavor combinations, we taste every product to make sure it’s up to our high standards.
Yes, it’s a tough job, but someone’s got to do it!
12:00 PM – Prepping for the Afternoon Rush
By midday, our chocolate kitchen is in full swing. We’re packaging up freshly made chocolates, wrapping them in our boxes, and preparing orders for both the shop and our online customers. It’s not just about making sure the chocolates are delicious—it’s about ensuring they look beautiful too. Presentation matters, and we love adding a personal touch to every package that goes out the door.
2:00 PM – Workshops and Tastings
One of the highlights of working at The Canny Chocolate Company is our customer workshops and tasting sessions. When the day starts to wind down, it’s time for a bit of fun in the kitchen. This is when we test new ideas, mix ingredients, and dream up new flavours. Some of our best-selling products were born out of these experimental sessions. We’re always on the lookout for inspiration, whether it’s from a recent trip abroad or a new ingredient we’ve come across.

Chocolate moulds are cleaned, equipment is carefully stored, and our workspace is polished and ready for another day of chocolate magic. We review the day’s production, check on upcoming orders, and get excited about what’s to come.
By the time we lock up for the night, we’re already thinking about what tomorrow holds—new batches to temper, new ideas to explore, and new ways to make our customers smile.
