In this two-hour class, you’ll dive into the techniques behind perfect choux pastry and explore the craft of creating elegant éclairs and choux buns with the finest ingredients. This hands-on masterclass, perfect for beginners and seasoned bakers alike, offers a taste of French patisserie right in the heart of the North East.
Your experience begins with the essentials of choux pastry, where you’ll learn to mix, pipe, and bake the dough to achieve the light, crisp texture choux is known for. Guided by us, you’ll discover tips for avoiding common pitfalls, ensuring every éclair and choux bun has a hollow centre ready to be filled. Once baked, you’ll move on to creating a rich chocolate crème pâtissière, ideal for filling your pastries and adding a luxurious touch to each bite.
To finish, you’ll master the art of glazing, giving your éclairs and buns that signature patisserie sheen. You’ll work with a variety of glazes, such as chocolate and caramel, to decorate and enhance your pastries. At the end of the workshop, you’ll leave with a beautiful box of your own choux creations to enjoy, along with recipes and techniques to recreate them at home.
This North East-based patisserie class is ideal for anyone from South Shields, Newcastle, or beyond who’s eager to experience authentic French pastry techniques and take their skills to the next level.
This is a practical, hands-on workshop held in a small-group setting with no more than 6 participants, allowing for personalised guidance. Please inform us of any allergies or dietary requirements at the time of booking, as our kitchen handles many allergens. For any concerns, contact us before booking.
Participants must be 14 years or older. Those under 18 must be accompanied by a paying adult. We are unable to accommodate non-paying spectators, babies, or pushchairs in the kitchen.
Please bring minimal personal belongings. Light refreshments are included, but you’re welcome to bring a drink in a sealed bottle.
Aprons and hairnets are provided, and participants will stand for the duration of the workshop. Limited seating is available if required. Contact us for specific accessibility needs so we can ensure we can accommodate.
Please arrive no earlier than 10 minutes before the session, and allow up to 2 hours for the full experience. Once booked, workshops cannot be rescheduled or refunded, so please choose your date carefully. In the unlikely event minimum numbers are not met, we will reach out to offer alternative dates.
